In the manifold variety of its landscapes Tuscany sums up the complexity of the man-nature relationship. The economy of Tuscany has achieved a maturity and an equilibrium in quality agriculture that represents one of the richest and most progressive aspects of the Italian and European economic panorama. Even the most recent economic development is no more than another step in the evolution of that ever-changing relationship of man and his environment, where the landscape, basically "natural" in its varied aspects, is integrally, or almost so, a human creation, a historical, cultural and social product.
The book examines the various geographical aspects of the region with particular attention to the old trades and various crops: wine, oil, grain, tobacco, chestnuts, beans, cheeses, as well as sheep-farming and transhumance, and the production of charcoal, with due attention paid to other aspects such as hunting and fishing, raising Chianine cattle and the "rite" of processing pork.
